Monday – Colcannon
Don’t waste your leftovers – use them up to make this amazing Colcannon recipe from Martha Stewart.
Yum, Yum, Yum! Colcannon is one of my favorite things about St. Patrick’s Day. It’s basically a mix-up of all the St. Patrick’s Day leftovers and IT. IS. SO. GOOD! We make it every year.
Tuesday – Creamy Balsamic Chicken Pasta Salad
We’re dreaming of summer over here! It’s been 0 degrees or less for the last 3 mornings and it’s cold, my friends. It sure doesn’t seem like March!
Here’s hoping that this summer-y Creamy Balsamic Chicken Pasta salad will help us wake up to a beautiful 1st day of spring tomorrow!

Wednesday – Reuben Sandwiches & Fries
Reuben Sandwiches are another leftover favorite from the Corned Beef & Cabbage! We’ll be having ours with a nice side of homemade french fries.

Thursday – Chicken & Waffles
Breakfast AND Dinner, anyone? Chicken & Waffles is the ultimate Breakfast FOR Dinner meal, you guys! You have to give this recipe from Grandbaby-Cakes a try…you’ll never want to eat plain, old waffles again. I promise!

Friday – Chicken Spaghetti
Okay, so you know how we love our spaghetti (and pizza…see the next item on the menu!), well, this week I thought we’d try something different. So, I searched for something new and came across this super yummy looking Chicken Spaghetti recipe from Just A Pinch. I’m really looking forward to trying it!
Saturday – Spicy Flatbread Pizza with Bacon & Garlic
Pizza, Pizza! Instead of our usually homemade pizza, I’m going to make Spicy Flatbread Pizza with Bacon & Garlic instead…these are the husband’s favorite and it’s been forever since we’ve had them. So, ya know…gotta keep him happy and all!
Sunday – Chicken & Vegetable Lasagna
This Chicken & Vegetable Lasagna is a super fun twist on the regular variety. And since tomato-y sauce has already been on the menu twice this week, I thought we’d have this instead. Another meal we haven’t had in forever…
Bonus: Dessert – Pineapple Upside Down Cake
And of course, a dessert! Since we’re dreaming of spring, let’s have this super sweet and summer-y Pineapple Upside Down Cake this week! Let me know if you make it.
