Easy Dinner Menu Ideas for the Week of 3/12/18
Monday – French Toast & Sausage
It’s breakfast night! Woohoo! We’ve had pancakes and Strawberry Stuffed French Toast recently, so tonight we’re having plain old fashioned french toast with lots of maple syrup and butter. Unfortunately, I don’t have the recipe posted on here, but I’ll try to take some pictures tonight so I can’t get that up here for you! In the meantime, here’s a French Toast recipe from Alton Brown that looks amazing!
Tuesday – Firecracker Chicken & Mashed Potatoes
We love this Firecracker Chicken recipe from South Your Mouth. It’s super spicy! I’ve been using it for several years now and the whole family loves it. But, make sure there is lots of extra mashed potatoes, because you’ll need them to cool down your tongue!
Wednesday – Cheeseburgers & French Fries
Dreaming of spring over here! Despite the fact that we’ll be grilling these inside on the trusty old George Foreman grill, these old-fashioned burgers & homemade french fries are sure to make us feel all warm and cozy, right?
Thursday – Balsamic Grilled Chicken Salad
We love chicken salads and we eat a lot of them in the summertime. I make a spectacular Balsamic Dressing that doubles as the marinade for the chicken and dressing the salad! Once again, I’ve found that this recipe isn’t posted, so I’ll try to get it up soon. For now, try this Balsamic Grilled Chicken recipe from Genius Kitchen and throw it over a green salad…it’ll taste just as good as mine!
Friday – Nachos
My daughters have been begging for Nachos for. like. ever. We haven’t had them in a long time and honestly, it’s one of their favorite “pick night” meals. So, this week I’m surprising them with a new twist on our favorite old-fashioned Nachos and we’re going to try these Loaded Nachos from The Pioneer Woman (minus the avocado…not a fan!)
Saturday – Corned Beef & Cabbage
Oh yes, my friends – It’s Time to Paddy! St. Patrick’s Day has arrived and we are going to eat our fill of Corned Beef & Cabbage. Unfortunately, I didn’t get a change to brine the corned beef this year (although I bought a stinkin’ chunk of beef to do so – lazy!), so I guess the store-bought will have to do. I don’t care – it’s not going to ruin my excitement about this meal!
Sunday – Chicken Parmesan & Angel Hair Pasta
This is probably our one and only “whole family favorite” meal. It’s the one meal we can all agree to put on the dinner menu and that’s okay because we really do love it. I usually have all of the ingredients on hand and my Chicken Parmesan recipe super easy to make – so, win-win on a Sunday night!
Bonus: Dessert – Lucky Cookies
Whip up a batch of these delicious Lucky Cookies for the kids – they’ll be happy as a leprechaun with a pot of gold!
