7 Easy Dinner Recipes for the Week of 3/26/18
Monday – Honey BBQ Chicken & Salad
The sun is shining and it’s warm (well, it’s supposed to be 46 today, anyway), so it’s time to start thinking of easy dinner recipes for our spring and summer menus! No more soups and casseroles…we’re moving on to Honey BBQ Chicken and Garden salads (from the grocery store at the moment).
Tuesday – Cheesy Meatball Subs
Cheesy Meatball Subs are an easy, pleasing meal, year-round – just don’t skimp on the cheesy!
Wednesday – Breakfast: Scrambled Eggs, Bacon and Country Fried Potatoes
I love having breakfast for dinner at least once a week and the easiest way to do it is eggs and bacon, of course. So, why not add some fun with Country Fried Potatoes, too?
Thursday – Creamy Baked Ziti
We’re leaving Spaghetti to the side this week and pulling out the Ziti instead. We haven’t had this Creamy Baked Ziti in forever and everyone loves it.
It’s funny how some of our favorite recipes get kicked aside and forgotten while we eat the same things over and over again, isn’t it?
Friday – Homemade Chicken Patties & Tater Tots
The girls love Homemade Chicken Patties and Tater Tots and it’s been awhile since we’ve had either one. So, we’re pulling out the stops and having fun with some oldies, but goodies this week.
Saturday – Homemade French Bread Pizza
Pizza, Pizza! As you know, we’ve gotta have a pizza night at least once a week. So, this week we’re going old school with Homemade French Bread Pizza…made entirely from scratch!

Sunday – Easy Beef Tacos from Betty Crocker
And last but not least, my youngest daughter’s favorite meal ever…Tacos. The kid loves them and has since she started eating solid food.
If it was up to her, her entire diet would consist of tacos, spaghetti and peanut butter and jelly sandwiches. As a teen, she’s starting to broaden her eating horizons, but God knows she still loves tacos. These Easy Beef Tacos from Betty Crocker are one of my favorite easy dinner recipes, too – they’re easy to make, don’t require a whole lotta ingredients and they taste amazing!
Bonus: Dessert – The Best Ever Soft & Chewy Peanut Butter Cookies
And a special treat for the husband…Soft & Chewy Peanut Butter Cookies…one of his very favorites.
