Delicious Avocado & Goat Cheese Salad

This delicious avocado & goat cheese salad is a lunch I dream about making. It has so many flavors that work so well together and every bite is a touch different. 

I, myself, love a good salad with complex flavors throughout. Your typical garden salad does the trick but add in some berries, nuts or specialty cheeses and you can sign me up. 

I don’t really understand why a salad is something I am so drawn to. I think all you salad lovers out there can attest that a good salad is worth mentioning. 

This is a really simple salad as there isn’t much chopping involved at all. However the feeling of getting a salad out at your local corner café is there!

A good salad is welcomed any time of year in my diet but I tend to NEED a salad more in the winter as I’m not eating an abundance of fresh veggies picked from my garden like I do all summer and fall long. So bringing salad into my average day really helps in fueling my body with all of the things it might be lacking. 

Avocado & Goat Cheese Salad

So lets get into what this salad incorporates. To be honest, I’m craving one just writing this.

My kiddos request it often! There are just enough flavors in it to keep them intrigued and the added surprise of sweetness on the goat cheese keeps them coming back for more.

Ingredients:

  • Green Leaf Lettuce or any lettuce variation (I recommend Little Leaf Farms if buying in store)
  • 1 cup assorted cherry tomatoes, sliced in half
  • 1 large avocado, diced
  • 1/2 cup crumbled goat cheese, I used a cranberry rolled goat cheese…highly recommended for added sweetness
  • Chopped parsley to taste
  • Himalayan pink salt and course ground pepper to taste

For dressing: 

  • 1/4 cup olive oil and juice of half a lemon

Directions: 

  1. Prepare your avocados by halving and pitting them then chop and halve your tomatoes. 
  2. Combine your dressing in a bowl and toss your avocado and tomatoes in dressing. Add salt and pepper.
  3. In large bowl combine freshly washed and torn lettuce and parsley. 
  4. Top with avocado and tomatoes, finish with crumbled goat cheese and a touch more salt and pepper.
