In my quest to reduce our grocery budget and to eat healthier, I’ve been trying to make some easy breakfast meals for the girls to pull out and eat quickly in the mornings before school.

The other day, I made a batch of homemade blueberry pop-tarts which came out so good that they went like hot cakes.

So good that they ate them all before I got the chance to photograph them for you (mostly because I procrastinated!). I promise to make them again soon, so I can share!

But, for today, I’m sharing another of our favorites – the best blueberry muffin recipe ever, along with a free printable of the recipe.

Why is it the best?

Well, because it is. These old fashioned blueberry muffins are so light and fluffy, so sweet and fruity. You’re going to love them and your kids are going to beg for them time and time again.

That’s why they’re the best – because everyone loves them!

And you’ll love them, too, because they are super easy to throw together and they don’t require any crazy ingredients. Plus, they’re ready in just 30 minutes, so it’s easy to whip up a batch any day of the week!

Supplies/Equipment Needed:

The Best Blueberry Muffin Recipe Ever

Best Blueberry Muffin Recipe Ever - 3
Prep Time 5 minutes
Cook Time 30 minutes
Additional Time 10 minutes
Total Time 45 minutes

Ingredients

  • 1/4 cup oil
  • 1 large egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup blueberries, frozen

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Line a 12 cavity muffin pan with reusable liners (or grease and flour each cavity).
  3. Combine the oil, egg, milk and vanilla extract in a small bowl. Set aside.
  4. In a large bowl, stir together the flour, sugar, salt, baking powder and cinnamon.
  5. Pour the liquid ingredients over the dry ingredients and stir to combine.
  6. Gently, fold in the blueberries.
  7. Scoop the mixture into the muffin pan using a medium scoop. Fill each cavity approximately 2/3 full.
  8. Bake for 25 to 30 minutes.
  9. Allow muffins to cool for 10 minutes before removing from the muffin pan.
