Zucchini bread is so scrumptious! Even if you don’t like zucchini, it is just plain yummy! Now add in chocolate chips? Yes please! My husband whom dislikes zucchini AND yogurt begs me to make this chocolate chip zucchini bread with greek yogurt. It is sweet and moist and a wonderful treat!
Zucchini bread is a great way to use up the over abundance of harvest we get each year and is also a really easy bread to make.
It is a sweet bread that can be eaten any time of the day or even just for a little pick me up treat.
The zucchini itself adds tons of moisture however and once you add yogurt it knocks it out of the park!
It really takes your average zucchini bread and amplifies the texture AND the flavor. People will be asking what your secret ingredient is!
Chocolate Chip Zucchini Bread with Greek Yogurt
Ingredients:
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup canola oil
- 1 egg @ room temperature
- 1/2 cup light brown sugar packed
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup vanilla or plain greek yogurt or sour cream
- 1 cup zucchini shredded
- 1 cup semi-sweet chocolate chips
- Optional add ins: orange zest (2 tsp), 1/2 cup of walnuts, 3/4 cup raisins
Directions:
- Preheat your oven to 350 degrees, Fahrenheit.
- Grease a 9×5″ loaf pan.
- Combine all dry ingredients and whisk together in a large bowl. (Flour, baking soda, baking powder, cinnamon, salt).
- Next, combine together the wet ingredients in a small bowl. (Oil, egg, brown sugar, granulated sugar, vanilla extract, yogurt).
- Now slowly pour wet ingredients into the dry until all combined.
- Fold in zucchini and chocolate chips.
- Pour mixture into greased loaf pan and bake for roughly 50 minutes or until top is lightly browned.
- To test readiness stick a toothpick into the center of the loaf, it should come out clean.
- Remove the bread from pan and allow to cool completely on a wire rack before storing.
