Cowboy Caviar is one of my favorite warm weather snacks. It is packed with fresh garden finds and not only is perfect for munching it can be used as a side dish to any BBQ dinner or a big batch can be shared at a potluck!
This dish is super easy to make. With no cooking involved and just some chopping and tossing it makes this easy to prepare quickly so you can pack it up and go or throw it into the fridge to chill while you focus on the main courses!!
Cowboy Caviar Recipe
Ingredients:
- 1/3 cup olive oil
- 1/2 cup raw apple cider vinegar
- 1 tsp salt
- 1 tsp pepper
- 1 tablespoon garlic powder
- Black beans – 15 oz can, drained and rinsed
- Black eye peas – 15 oz can, drained and rinsed
- Yellow and white sweet corn – 11 oz can, drained
- 1 bunch of green onions, chopped
- 1 cup tomatoes, de-seeded and chopped
- Bell pepper, chopped (I used small sweet peppers – red, orange and yellow…for color pop)
- Optional: jalapeno pepper, avocado, red onion – these will all advance your flavors to the next level!
Instructions:
- Combine olive oil, apple cider vinegar, salt, pepper and garlic powder in a small bowl. Whisk together until combined.
- In a large bowl combine black beans, black eyed peas, corn, green onion, tomatoes and peppers.
- Gently toss in your dressing until well coated.
- Serve immediately or chill. When chilled in the fridge to “marinate” the flavors will continue to build!
- If adding in avocado, toss in chopped avocado immediately before serving.

This chilled mixture serves incredible with a heavy meat off of the grill or smoker.
