Happy Monday! I hope you had a great weekend. Our dinner menu for the week is super simple with a spooky treat for Halloween on Wednesday.
My kids are quitting on trick or treating this year (they’re “too old” or so they think), so instead my oldest daughter is having a couple of friends over to watch scary movies and eat junk and my youngest will be joining in.
Since they seem to have lost the Halloween spirit, I’m going to amp it up a little and make some fun food for their little party starting with Hot Dog Mummy’s for an appetizer, then Meatball Spiders floating in blood for dinner and ending the night with some good old-fashioned eye balls for dessert.
What could be better? I mean, everybody loves eating spiders and eyeballs…right?
Anyway, here’s the dinner menu for the week…
Dinner Menu for the Week of 10/29/18
Monday – New York Style Bacon, Egg & Cheese Breakfast Sandwiches (we almost always make our breakfast sandwiches this way, but I’ve never posted a recipe…it’s just the way we’ve always done it. If not a bagel, a hard roll or crispy English muffin!) but if you don’t know what a New York Style Bacon, Egg & Cheese Breakfast Sandwich is, head over to Olivia’s Cuisine to find out and get her simple recipe!)
Tuesday – BBQ Beef Tostadas from Cupcakes & Kale Chips
Wednesday – HAPPY HALLOWEEN – Hot Dog Mummy’s (from Pillsbury), Meatball Spiders (from Two Kids Cooking) & Spicy Spaghetti Sauce AKA Blood and Eyeball Cookies (from Genius Kitchen) for Dessert
Thursday – Italian Chicken Sandwiches & French Fries
I just realized I don’t have a recipe posted for Italian Chicken Sandwiches but they are so SIMPLE!
Just put enough chicken into a gallon zipper bag for your family (I use 4 or 5 whole chicken breasts). Cover with Italian salad dressing (any kind works!). Close up the bag and let it marinate for as long as you like…30 minutes up to 2 days (in the refrigerator).
- Bake at 375 for 25 to 30 minutes (depending on the thickness of your chicken).
- Pan Fry on medium temperature – 7 to 10 minutes on each side.
- Grill at 375 degrees Fahrenheit – 7 to 10 minutes on each side.
Serve on hearty sandwich rolls.
Friday – Flatbread Pizza with Spicy Bacon & Garlic
Saturday – Pineapple Chicken
Sunday – Creamy Baked Ziti
