Egg Roll In A Bowl Recipe

Lately being more conscientious about what I am consuming can be a task, especially with all the extra time I’ve been spending in the kitchen on these colder Vermont days…..come on Winter, it’s time to vacate.

I’ve been trying to be a little bit more aware of carb and sugar intake and through this so I have put together some recipes that are much healthier but still have a lot of layers of flavor and pizazz to them. Enter – egg roll in a bowl.

This dish does NOT lack any big bursts of flavor. It is mighty tasty and has so many nutritionally supportive ingredients.

It’s very much like calling in take out but much healthier and homecooked!

Egg Roll In A Bowl

  • 1 pound chicken or steak (I did a blend here)
  • 1 tablespoon chopped garlic
  • 1/4 cup soy sauce
  • 12 oz shredded cabbage or slaw mix
  • 1 tablespoon freshy grated ginger
  • sriracha, to taste
  • 1 large egg
  • Optional: sesame oil, seeds, green onions

  1. Brown your protein of choice. Add garlic into pan and sauté until fragrant.
  2. Add in your cabbage or slaw mix, ginger, soy sauce and more water if necessary as you are stirring and checking on tenderness.
  3. Pull apart sides to make a well in the center of your pan. Crack the egg into the well and gently scramble on low heat.
  4. Add sriracha and sesame oil until desired spice level is met.
  5. Top with green onions, sesame seeds and oils.

This dish is going to feel like you’re indulging on cheat night but you aren’t actually. It has so many incredible nutrients and wonderful ingredients.
