This filling ham & noodle casserole is such a comfort dish and is a wonderful way to use up leftover ham!
This would be the perfect casserole to make with Easter dinner leftovers.
You can even freeze this casserole for an easy pop in dinner on a night when you are busy out in the yard a little later than usual! This frozen casserole can hold up in the freezer for up to 3 months!
It doesn’t take long to put this recipe together but the flavors are still big and tasty!

Ham & Egg Noodle Casserole
Ingredients:
- 12 ounce bag of egg noodles, recommend wide
- 1/4 cup of salted butter
- 3 medium garlic cloves, minced
- 1/4 cup all purpose flour
- 2 cups chicken broth
- 1 cup whole milk
- 1 cup sour cream
- Tsp. each of black pepper, dried parsley & onion powder
- 3-4 cups diced ham
- 1.5 cups of peas & carrots, cooked
- 2 cups freshly grated, or pre shredded, cheese (recommended: cheddar blend or mozzarella)
Directions:
- Bring a pot of water to a boil, adding a pinch of salt. Cook egg noodles until al dente. (Most packages have instructions). Boil frozen veg blend. Strain and set aside.
- Preheat oven to 350 and have a casserole dish greased and ready.
- In a large nonstick skillet melt your butter and then add in minced garlic. Cook for a minute or less or until you can smell the garlic!
- Pour your milk and chicken broth into a measuring cup and mix, set aside.
- Add flour into your butter/garlic mixture. Then slowly pour in your milk and chicken broth mixture, stirring constantly. Whisk until smooth.
- Bring your black pepper, parsley and onion powder into your roux. Then sour cream and 1 cup of cheese. Whisk until smooth and allow to thicken.
- Add in your ham and cooked egg noodles and vegetables and mix until coated evenly. Pour everything into your casserole dish.
- Top with remaining cup of shredded cheese and bake for 10-15 minutes or until cheese has melted.
- Allow to cool for 5-10 minutes before serving!
