This homemade pancake recipe is one that we use on Sunday mornings for a big family breakfast. However, if this one doesn’t suit your taste buds, I have some recipes that are totally noteworthy for other fluffy flapjacks.
Sunday mornings are a time for togetherness for us. We like to start the day off a little slower, fuel our bodies with a big meal and then spend the rest of it in a calm space.
We typically do not make too many plans and go with the flow. This leaves room for creativity, rest and one on one time with our children. Truly we let them be the guides most Sundays as a thank you for being so patient during the week with our busy schedule of a family of 5.
In our mission at our homestead to become more aware of what we are consuming we have been slowly ditching some of the go-to box products we always had stocked in our cupboards.
Things like seasoning mixes, boxed dinner sides or pancake/waffle mixes is a wonderful place to start. Most of these things are shockingly easy to do from scratch and the end product far outweighs any store bought ready to roll item you can purchase at your grocery store.
Homemade Pancake Recipe
Ingredients:
- 1 & 1/2 cups all purpose flour (I recommend King Arthur Flour)
- 2 & 3/4 tsp. baking powder
- 1 tsp. salt
- 1 tbsp. sugar
- 1 & 1/4 cups milk
- 1 large egg slightly beaten
- 2 tbsp. unsalted butter, melted
Directions:
- Combine the flour, baking powder, salt and sugar in a large bowl.
- After making a well in the center of our mixture add the milk, eggs and butter to the well. Stir ingredients together until well combined and no longer lumpy. Be sure to not over mix.
- Allow your batter to rest for 5-10 minutes to thicken.
- Heat skillet or griddle to medium heat and use butter or oil to coat the pan. (I prefer butter, it will add a layer of beautiful brown coating to the outside of your flapjack).
- For medium sized pancakes add about 1/4 cup of batter mix to pan and allow bubbles to rise up through the batter and to the surface, flip and finish off for about 1 minute.
Have on hand sliced butter pads to top pancakes and real maple syrup, my preference….well of course Vermont maple syrup because it is arguably the best!

There are endless pancake recipes all over the web and a lot of them are really similar. Pancake batter is really straight forward and you can start with your base and then jazz it up however you’d like. Extra Fluffy Dairy Free Pancakes by Simply Whisked
This is a wonderful option if you have dairy restrictions in your diet! These pancakes are still just as stackable as the next and will satisfy your breakfast plate just as well! This recipe calls for almond milk, but if you have a nut allergy, they said coconut milk will work just fine as well!

Homemade Blueberry Pancakes by Tidy Mom
Blueberries are one my all time favorite things to add into pancakes. It makes the entire dish so different and delicious! Store bought berries will do the trick but if you have the opportunity to pick fresh berries and add them in, do it! Wild blueberries taste just a touch different than the larger plump berries and they can make your stack of jacks out of this world yummy!
S’Mores Chocolate Chip Pancakes by Flavor Mosaic
This recipe really ups the sweetness factor and is so fun! A perfect recipe to have in your wheelhouse for skillet camping breakfasts. The kids go nuts for this pancake variation and you can honestly even skip the syrup if you want because them alone is a treat in itself!
