Lasagna Cupcakes

If you’ve been reading my blog for any amount of time, then you already know that Lasagna is my favorite food in the world. We love it, whether it’s your standard Homemade Lasagna or Chicken and Vegetable Lasagna, everyone in my family enjoys the cheesy layered dish.

Sometimes, it’s nice to change things up a little bit and the kids love Lasagna Cupcakes! Dinner becomes so much more fun with they think they’re eating cupcakes! I’ll bet your kiddos would love them, too! So, try it tonight – your family will thank you!

Lasagna Cupcakes

Supplies Needed:

Ingredients:

  • 1 lb. lasagna noodles
  • 4 cups homemade spaghetti sauce (or 2 jars of pre-made)
  • 1 pint ricotta cheese
  • 1 tablespoon Italian seasonings
  • 1/2 tablespoon basil, dried
  • 1 egg
  • 2 cups mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded

 

Break the lasagna noodles in half. Boil in a large stock pot, as directed on the packaging.
Cook a big batch of homemade spaghetti sauce or heat up a couple of pre-made jars.
Fill the bottom of each muffin cavity with a little bit of sauce…about 2 tablespoons.
Mix the ricotta cheese, Italian seasonings, basil and egg in a small mixing bowl.
Spread the ricotta cheese mixture on one side of each lasagna noodle.
Mix the shredded mozzarella and cheddar cheeses in a small bowl. Reserve half of the cheese for later.
Sprinkle the cheese on each lasagna noodle.
Roll up one lasagna noodle with the cheese facing the inside. Place the rolled up noodle on one end of a second noodle, wrap the second noodle around the first. Repeat with a third piece of lasagna.
Use a sharp knife to slice the lasagna roll in half. Place each half inside the muffin pan.
Repeat with each lasagna roll.
Cover with sauce. Sprinkle with remaining cheese.
Bake at 375 degrees for 20 to 25 minutes.
Serve warm.
