Do you have leftover mashed potatoes? Do not let them go to waste! Frankly, leftover mashed potatoes can be kind of….bleh. So I like to take my batch and make leftover potato croquettes. They are to die for!
The entire family loves them and they bring a whole new life to that cold container of potato brick in the refrigerator!
Leftover Potato Croquettes
Ingredients:
- 2 cups mashed potatoes
- 2 eggs, separated
- 1/2 cup Parmesan cheese
- 1/2 cup cheddar cheese
- 1 tablespoon flour
- 1 teaspoon minced garlic
- 1 cup bread crumbs, italian
- 3 cups vegetable oil
- 1 tablespoon chopped chives, optional for add in and/or garnish
Directions:
- Separate your egg yolks from your egg whites.
- Combine cold mashed potatoes, egg yolks, parmesan and cheddar cheese, flour, and minced garlic together in a bowl.
- Create balls with potato blend and set aside.
- Whip your egg whites in a bowl and put your bread crumbs in a separate bowl. Dredge your potato balls in egg and the bread crumbs.
- Heat oil on stovetop, add croquettes into oil, using a spoon to turn them over until golden brown. Roughly 3-4 minutes.
- Allow to drip drain onto paper bag.
- Serve immediately!

These croquettes creations are delicious just as they come but if you really want to amplify the experience you could simply add things in like bacon bits, bits of ham or you could jazz the experience up with some incredible dipping sauces!
