Busy season is upon us, well…almost. The prep for busy season has begun in my home however. That is why I am focusing on make ahead breakfasts. So I whipped up a big batch of egg muffins to have in the freezer. I thought what better way to ease the burdens of cooking then have some healthier options pre-made?
So, with this article I’ll let you in on my incredibly easy and tasty egg muffin recipe plus other make ahead and/or freeze breakfast options that are much healthier and more budget friendly then grabbing all the frozen Eggo and Jimmy Dean options from the store.
In the late Winter, early Spring my homestead starts to wake back up again. We take hibernation pretty seriously…don’t get me wrong. It is so important to allow your body and mind some rest time. But, I am always MORE than ready for when the snow starts to melt off and things start to come up through the soil.
A breath of fresh air.
But even before the growth begins there is months of prep. We are planning gardens, starting seeds and finalizing plans for more livestock to come onto the property.
With all this extra work comes less time for cooking. It is so easy to fall into unhealthy habits when your schedule gets full. Quick and easy meals usually come packed with a lot of unhealthy ingredients and additives.
Having some healthier options sitting in the freezer can make the world of the a difference not only for your health but for your sanity and your wallet! Yes, make ahead meals are a million times more convenient and cheaper than store bought even if you have to spend a day like a cooking madwomen in the kitchen getting it all done.
Why not spend a few extra hours with prep to open your schedule up with days worth of time? And, no guilt because instead of the bad for you Poptarts or box of Eggo waffles you have home cooked goodness that just needs to be popped into the toaster, microwave or oven for a quick and nutritional start to your day.
Plus….have you seen the cost of some of these grocery items? Remember those days when eating unhealthy was easier because it was cheaper? Not even the cheap stuff is cheap anymore!
Make Ahead Breakfasts: Egg Muffins & More!
Easy Egg Muffins
Not only can these egg muffins be put together and cooked with much less of a mess than your traditional breakfast but it is an all in one kind of deal! Everything good about a full plate of wake up nutrition goes into these tiny muffins and don’t let the size fool you because boy are they filling!
They freeze well, defrost fast and the flavor and texture holds up perfectly.
Ingredients:
- 11 large eggs
- 1/2 cup of whole milk
- 1 cup finely chopped red bell pepper
- 16 oz. cooked ground breakfast sausage, drained
- 1.5 cups shredded potato
- 1/4 cup of shredded cheddar cheese
- 1 tbsp. parsley
- 1 tsp. salt & pepper
Directions:
- Preheat the oven to 375.
- Grease your muffin tin.
- Cook your sausage in a stovetop pan, drain the grease.
- Whisk the eggs in a large bowl and then add in milk.
- Stir in bell pepper, sausage, potato, cheese, parsley, salt and pepper.
- Pour into muffin cups, filling 3/4 of the way.
- Bake for 20 minutes.
- Cool on wiring rack, allow cooling for 30 minutes before freezing.
Tip: Freeze stacked upright in a single file line for easier grab and go to defrost!
Defrost in the microwave for 1 min – 1 min 15 seconds
