Oven Roasted Crispy Herbed Smash Potatoes

Did someone say potatoes? We are a potato loving family – in any variation. Chunk, mashed, baked, fries….the list goes on. We certainly do not discriminate. These oven roasted crispy herbed smash potatoes are hands down one of our new all time favorites. Once you give them a bite, I mean try, I don’t think you will disagree.

Just imagine a mix between a homemade potato chip but fluffier, a bit more soft and a lot more delicious. A crispy shell that is perfectly soft inside. These pair with any recipe as a side or honestly can be made just to munch on…

Instructions:

  1. Wash and scrub your potatoes, preheat your oven to 395 degrees F.
  2. Place potatoes into a saucepan of water and cook until water comes to a rolling boil, add in a dash of salt. Boil until potatoes are fork tender.
  3. Remove and strain water. Pat potatoes dry and allow to cool on a rack for roughly 5 minutes. (This will make your skins extra crispy).
  4. Place onto baking sheet and use a large fork or handheld potato masher to gently push down flat onto each potato until it smashes open.
  5. Melt butter, and add in olive oil in a small bowl. Prepare oregano, parsley, basil and garlic powder mixture in a separate bowl.
  6. Brush butter and oil mixture generously over smashed potatoes. Sprinkle herb mixture over them.
  7. Bake for 45 minutes or until brown and crispy.

While any potato can suit this recipe ok I highly recommend red skinned or the gemstone blend as they are packed with bursts of flavor and you get a change up with each smash potato bite!

Now it’s your turn to get your crunch on at the next family dinner or show up with a plate full of crispy for your next BBQ gathering.
