Did someone say potatoes? We are a potato loving family – in any variation. Chunk, mashed, baked, fries….the list goes on. We certainly do not discriminate. These oven roasted crispy herbed smash potatoes are hands down one of our new all time favorites. Once you give them a bite, I mean try, I don’t think you will disagree.

Oven Roasted Crispy Herbed Smash Potatoes
Ingredients:
- 1.5 lbs or one bag of Gemstone Baby Potatoes or any variation of small-medium sized potato
- 1/2 stick of butter
- 2 tablespoons olive oil
- 1/2 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon basil
- Tablespoon garlic powder
Instructions:
- Wash and scrub your potatoes, preheat your oven to 395 degrees F.
- Place potatoes into a saucepan of water and cook until water comes to a rolling boil, add in a dash of salt. Boil until potatoes are fork tender.
- Remove and strain water. Pat potatoes dry and allow to cool on a rack for roughly 5 minutes. (This will make your skins extra crispy).
- Place onto baking sheet and use a large fork or handheld potato masher to gently push down flat onto each potato until it smashes open.
- Melt butter, and add in olive oil in a small bowl. Prepare oregano, parsley, basil and garlic powder mixture in a separate bowl.
- Brush butter and oil mixture generously over smashed potatoes. Sprinkle herb mixture over them.
- Bake for 45 minutes or until brown and crispy.
