Peanut Butter Buckeye Cookie Recipe

Ingredients
For the cookie:
- 1 chocolate cake mix
- 1/4 cup butter, melted
- 4 ounces cream cheese, softened
For the filling:
- 1 cup peanut butter
- 1 cup confectioners sugar
- 2 teaspoons vanilla
For the topping:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon shortening
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Combine the chocolate cake mix, butter and cream cheese in a large mixing bowl.
- Use a medium cookie scoop to scoop 24 cookies onto 2 baking sheets (12 on each sheet).
- Bake for 10 minutes.
- Place the peanut butter, confectioners sugar and vanilla in a large bowl. Stir until smooth.
- Use a small cookie scoop to scoop 24 "balls" of the peanut butter mixture onto a sheet of wax paper.
- Remove the cookies from the oven and place on a wire rack or sheet of wax paper to cool. Press the peanut butter "balls" into the center of each cookie.
- Place the chocolate chips and shortening into a small microwave safe bowl. Put the chips in the microwave for 1 minute. Stir to combine. If the chocolate is not melted, return to the microwave for 20 seconds. Repeat 20 second intervals until all the chocolate chips have melted.
- Use a teaspoon to drizzle the melted chocolate over the tops of the cookies.
- Cool until the chocolate hardens, about 10 minutes.
Some days, I spend a lot of time procrastinating researching on Pinterest, as was the case the other day. The advantage of the time suck, of course, is that sometimes you come across some really amazing things that you weren’t expecting to find. Like this Peanut Butter Buckeye Cookie recipe!
I mean, come on – what could possibly be better than peanut butter & chocolate together? Peanut Butter Balls or {buckeyes} are one of my very favorite Christmas treats and when I saw that some brilliant person had turned them into a cookie…I had to try them!
The original recipe is really pretty simple, but as is always the case, I didn’t have a couple of the recommended ingredients.
Since I had to get creative with the recipe, I substituted the brownie mix for cake mix and instead of using the “Candiquik” as suggested, I melted chocolate chips and drizzled those over the top.
Not that it really mattered…the girls and the husband inhaled 1/2 of the batch before the night was out.
I didn’t really expect any different, who could possibly resist this decadent cookie?
No one in my house!

- 2 Large mixing bowls
- Medium cookie scoop
- Small cookie scoop (*Get a set of 3 (small, medium and large) cookie scoops on Amazon!)
- Wax paper
- 2 Baking sheets
- Wire cooling rack
- Small microwave safe bowl
