I say this with sadness because I LOVE peanut butter. Like….gravitate towards it 100% of the time. So what did I go and do? Fall hopelessly in love with a man who is deathly allergic. With lots of trial and error and patience I have come to find a couple of recipes that are still delicious enough even with out that creamy beautiful addition. My husband grew up not being able to enjoy many desserts for the simple fact that there are warning labels on everything…and honestly it’s gotten much worse over the years.
He even couldn’t eat much when things were homemade because once you are at that event people can’t truly answer the question, “are ALL ingredients nut free and also not manufactured on the same equipment?” Yes….the allergy is that bad.
So he just opted out of having that last decadent course and over the years missed out on so much!
After marrying him and enjoying a sweet dessert myself every now and again I took it as a challenge to find things he would enjoy and not have to stress about any exposure.
Our kids too! We had to keep them nut free in their earlier years. Really until they understood the severity of it all and could make decisions not to consume peanut butter and come home to give daddy a smooch!
No Bake Chocolate Cookies With Old Fashioned Oats
I wish I had found these no bake cookies sooner, they were a recent discovery and wow they are on the top of the list now.
With small children in the house these cookies are incredibly easy to make and you can whip up a batch in minutes unlike many other homemade cookie recipes that require many bowls and lots of mixing.
They have all that chocolatey goodness with the added texture of the oats and they are just plain yummy.
Ingredients:
- 1/3 cup cocoa powder
- 2 cups granulated sugar
- 1/2 cup milk
- 1 stick of unsalted butter
- 1/4 tsp salt
- 1/4 tsp vanilla extract
- 3 cups old fashioned oats
You might chuckle when you see the directions because they are literally that easy…
- Combine cocoa powder, granulated sugar, milk, butter and salt in a pan over medium heat until boiling.
- Boil while stirring frequently for 3 minutes.
- Add in your vanilla extract and then remove from heat.
- Mix in the old fashion oats and let sit for 5 minutes so oats soften.
- Line a baking sheet with wax or parchment paper and dollop cookies onto sheet. Place into fridge and let sit for 15-20 minutes!

A no nut, no bake option for a delicious and fast treat!

The restrictions with nut allergies in school is really serious and my family can appreciate those that take it seriously.
Allergies can be really severe and very scary but they don’t mean you can’t still enjoy delicious food!
Or maybe you just don’t enjoy nuts or nut butters all together. One of these yummy options might speak to you instead.
I know that we do a rotation on some of these every once in awhile and always feel happy, fulfilled and safe in the end.
