This sesame chicken stir fry with vegetables dish is absolutely loaded with big flavor! Also- we love a good stir fry because it is a great way to use up some of those veggies in the fridge or just simply add more nutrition to the plate!! Want to add in another perk of the dish? That leftover sesame chicken is delicious cold on a salad too!
With a homemade marinade and fluffy white rice in the mix this dish is really going to satisfy the need for a take out order or give you an option to change up dinner plans!
Sesame Chicken Stir Fry with Vegetables
Ingredients
- 1 pound boneless, skinless chicken strips
- White rice
- 1/2 a bundle of fresh broccoli tops
- 1 sweet yellow pepper
- 1 sweet onion
- Sesame seeds
- Fresh chopped parsley
- 1/4 cup flour
- Oil of choice for frying: vegetable, peanut, etc.
Sesame Marinade:
- 2 tablespoons soy sauce
- 1.5 tablespoons toasted sesame oil
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
- Teaspoon chili flakes
- Teaspoon garlic powder
Combine all into a bowl and set aside
Directions:
- Cut the chicken strips into 1/2″ chunks.
- Cover with marinade and let sit for at least 30 minutes prior to cooking.
- Dice all of your vegetables up and sauté in a pan with olive oil and garlic, (optional).
- Cook your rice according to manufacturer’s directions.
- While your vegetables and rice are cooking coat your chicken in flour directly in the marinade bowl.
- Pour oil of choice into separate pan, (enough to submerge the chicken chunks), and begin frying chicken.
- Be sure to not overfill the pan allowing room for chicken to fry evenly and flip easily.
- Cook chicken chunks approximately 5-7 minutes each side or until chicken is no longer pink inside.
- Remove chicken and vegetables from oils and grease drip off.
- Assemble your plate and top with sesame seeds.
