Sheet Pan Gnocchi and Brussels Sprouts

An easy sheet pan meal is my go to for busier nights or if I am not in the mood to be attached to the kitchen for several hours prepping and cooking stovetop. This sheet pan gnocchi and brussels sprouts recipe is incredibly simple to put together. Also, it is bursting with flavor and also requires very little mess to be made!

You can make this an even faster process if you precut your brussels or pre-cook your bacon so that all your ingredients are ready to just be tossed together and dumped on the sheet pan to bake!

I love these types of meals, especially in the warmer months when more times than not we are outside and consumed by the gardens much later than we’d care to admit.

Sheet Pan Gnocchi and Brussels Sprouts

  • 1 lb brussels sprouts, trimmed
  • 2 shallots, sliced
  • 6 bacon strips, cut into small pieces
  • 16 oz gnocchi
  • 4 tbsp olive oil
  • Zest of half a lemon
  • 1 tbsp minced garlic
  • Salt and pepper to taste

  1. Preheat the oven to 400 degrees.
  2. In a large bowl, toss all of your ingredients together until well coated with olive oil.
  3. Pour out onto a sheet pan in an even layer.
  4. Drizzle a touch more olive oil all over.
  5. Cook for 35-45 minutes or until everything is browned and crispy to your liking.
