Slow Cooker Stout Chili is the very first recipe I gravitate towards once the temps start to drop and the leaves start to turn. It is one of those dishes that warms your body and your soul.
I love to cook in my slow cooker this time of the year. It is easy and convenient to get things going in the morning and not have to worry much about them throughout the day.
With the start of school, fall activities and it getting darker sooner, (cue the yawns), having a dinner ready to go once everyone is settled back home after a busy day makes life much easier.
Plus… slow cooked food is mouth watering delicious. My favorite is walking through the door after it’s been doing it’s magic all day. The house smells like a piece of heaven!
This stout chili is a little spin on a classic dish and once I concocted on a whim one day we realized we might not ever go back to the original…
This variation is so deep in flavors and has a much heartier bite than classic tomato sauce chili. You still have notes of sweet and loads of beans.

Slow Cooker Stout Chili
Ingredients:
- 3 tablespoons olive oil
- 2 pounds ground beef (lean)
- 2 medium sweet onions
- 5 garlic cloves, minced
- 1 can kidney beans, drained and rinsed
- Can of black beans, drained and rinsed
- 1 can chili beans
- Can of fire roasted corn
- Can of fire roasted tomatoes
- 6 oz can of tomato paste
- 3 tablespoons chili powder
- 1/2 tsp cayenne
- 2 tablespoons ground cumin
- 1 to 1.5 – 16 oz. can of stout beer (make sure you check flavor and choose one with your preferences)
- I will add one can and let it cook for a couple of hours, if when I taste test I want it a “deeper” taste I will another half of a can.
Directions:
- Start by heating olive oil in a pan over medium heat. Add in your diced onions and minced garlic. Cook until slightly softened.
- Remove onions and garlic from oil and put directly into slow cooker, do not rinse the pan.
- Add ground beef to the oil and cook until browned, do not cook all the way through – it will finish in the slow cooker. Drain.
- Put beef into slow cooker, and then add the remainder of ingredients. Mix well.
- Cook on low for 6-8 hours, checking periodically and stirring.
For serving:
- Fresh chopped scallions
- Sour cream
- Diced jalapenos
- Shredded cheese
