Sourdough Discard Bread- In Under 2 Hours

Today I want to take you through my sourdough discard bread – in under 2 hours recipe!

My newest homesteading venture has been breaking into the world of sourdough! I recently started from scratch and it’s been really successful thus far. 

With my homesteading mindset I like to not waste a thing. For that, I have compiled a nice list of discard recipes that I can go to and make something delicious fairly quick for the family.

This discard recipe has been a family favorite and I have been making a loaf every week!

Sourdough Discard Bread- In Under 2 Hours



  • 450 grams bread flour
  • 360 grams warm water
  • 10 grams salt
  • 7 grams Instant Yeast or Rapid Yeast
  • 100 grams sourdough discard, unfed sourdough starter

  1. Combine your ingredients in a glass bowl and with a wooden spoon, bring them together until all of them are incorporated. Leaving you with a shaggy dough.
  2. Cover with plastic wrap and allow to rise for 1-2 hours. The temperature of your home will determine the length of time. You want it to double in size. 
  3. Preheat your oven to 430° Fahrenheit. Place a piece of parchment paper onto the counter and lightly dust the surface with flour.
  4. Dump your dough onto the paper. Shape and fold if the dough is not too wet. If it is, just simply drop your parchment paper with the dough into your dutch oven, glass dish or cast iron! 
  5. Bake at 430 for 30 minutes, then drop your temp down to 390 to finish it off for another 15-20 minutes. 

*If you do not have a dutch oven simply cover your pan with a foil during the high heat cook OR place a baking sheet of water in the oven on the rack below it. 

*If you are cooking with a dutch oven cover during the high heat and remove during the low heat cook. This will develop the beautiful dark crust for your loaf.

  • Olive and walnut
  • Sundried tomatoes and mozzarella 
  • Jalapeno and cheddar
  • Coconut and dark chocolate
  • Asiago and hot honey
  • Dried cranberries and raisins
