Hello! I hope you’re week is off to a great start! Today, I’m sharing my favorite Sweet Corn Salsa and I hope you love it too!
My youngest daughter and I really like Mexican food but neither of us likes to eat all the junk in store-bought salsa.
So, we’ve come up with this delicious Sweet Corn Salsa recipe as an alternative.
It is so easy to make that we sometimes make it and eat it with just corn chips!
Our Sweet Corn Salsa recipe only requires 5 simple ingredients – canned tomatoes with chilies, corn and spices – you basically throw everything into a bowl and refrigerate until you’re ready to eat.
I told you it was easy – No cooking required!
It’s perfect for a side dish on a busy night, for Taco Tuesday or even to serve with chips at your next party.
And feel free to alter the recipe to add some of your favorite ingredients!
Over the years we’ve added beans, onions, jalapeno peppers, diced cucumbers, celery, chopped garlic and cilantro, depending on who is eating it.
We’ve even added melted cheese and eaten it like a queso dip.
And we usually eat the whole bowl…it’s really that good.
Be sure to add it to your dinner menu the next time you’re serving tacos!
You’re going to love it…
Here’s the recipe…
