Looking for an easy pressure canning potatoes recipe? Look no further – this simple, step by step recipe is super easy to follow and you’ll have your own canned potatoes on the shelf in no time!
We love potatoes and eat a great deal of them around here, but sometimes, it’s such a hassle to peel and cook them fresh day after day. So, instead, I’ve started pressure canning potatoes in different shapes and sizes to keep in the pantry for busy days or days when I just don’t want to spend hours in the kitchen cooking.
And let me say, these homemade canned potatoes are so easy to pull of the shelf and make dinner…or lunch…or even breakfast!
We’ve used them to make french fries…
and even…
Mashed Potatoes!
They are so versatile…basically, you can use them for any of your favorite potato recipes.
In fact, you can even can little baby potatoes whole if you plan to serve them that way.
So, let’s head to the kitchen and start canning potatoes…
Before you get started: Be sure to read instructions here for safe canning methods and find your appropriate canning time in the table shown here.
First time pressure canning? Follow the directions here for use and best safety practices.
Before we get started, let me just add, the yield of jars will depend on the number of potatoes you choose to use…
10 lbs of potatoes will yield roughly 8 pints, whereas, 20 lbs of potatoes will yield around 7 quarts.
Okay…moving on…
Pressure Canning Potatoes at Home
First, wash jars, lids and rings.
Then, put a large stock pot of water on the stove to boil.
After you’ve got your prep work done, wash and peel your potatoes.
Now, slice, dice or quarter your potatoes into whatever shape you’d like.
Drop the potatoes into the boiling water and cook for 2 minutes (if you are using whole baby potatoes, cook for 10 minutes). Drain.
Turn on your electric tea kettle or put a fresh pot of water on the stove to boil.
Add 1/2 to 1 teaspoon of salt to each jar.
Fill your jars with potatoes and then, cover with fresh boiling water.
Wipe the rims clean and cover with lids and rings.
Process in a pressure canner at 15 lbs. for 35 minutes for pints and 40 minutes for quarts.
