How to Can Chicken at Home
Before you get started: Be sure to read instructions here for safe canning methods and find your appropriate canning time in the table shown here.
First time pressure canning? Follow the directions here for use and best safety practices.
Side note: For those of you that are new to canning, let me start by saying that we are doing a process called “raw pack”. This means that we are packing the chicken into the jars raw, so that it will cook in its own juices while it is processing. It’s super easy and in my opinion, it produces the best flavored chicken.
In addition, this recipe is for boneless, skinless chicken. If you would prefer to can chicken with bones or skin, such as drumsticks, please follow the instructions here.
Okay, first, wash your jars and lids.
Add 1/2 teaspoon salt to each pint jar and 1 teaspoon of salt to each quart jar.
Cut the chicken into chunks, about 1 inch or so in size.
Then, shove all the chicken pieces into your jars…make sure to pack it all in tight, leaving about 1-1/4 inch of headspace.
Wipe the rims of the jars clean and cover with lids and rings, finger tight.
Process in a pressure canner at 15 lbs. for 75 minutes for pints and 90 minutes for quarts.
Remove the jars from the canner and allow them to rest on the counter for 12 to 24 hours before moving to the shelf.
That’s it! Easy peasy!
